Simple as that. How do I leave a game?

You don't. You play the games you started.

If game has started then only way out is either dying or winning the game. So hang on and get the best out of the game you've created/joined

Seems strange that there is no option to quit - if for some reason I can't continue my games I have to be auto-kicked out of all of them?

Well I might have to urgently go away to a place where there's no Internet access for more than three days. In an ideal world one would always fight until the bitter end, rooting for every last roll, but if for some reason I physically cannot play, wouldn't it be better all round if I just ducked out and let the rest of them get on with it.

tell the other players through game chat and they might forgive you
or don't join any games if you're planning on going somewhere

Also in certain circumstances it is allowed to let someone else take your place.
Common sense require you to select someone who is not banned, or blocked by any other player, not a player already on the table, and you announce it in chat. Preferably before you even intend to make the switch.

You don't quit unless you really want to tarnish your rep on the site. If you are in a situation where you might be called away or life occasionally just interferes, then arrange a sitter. Many of us have a sitter. They have your password, and can come in and play for you. Courtesy is they announce in the chat, for example: "Silly Knig-it for Hismir, who is (under two hours, gone for three days, out today, etc)". Then everyone knows that you did not play and someone covered your turn.

So what if you start a trench of warfare game with escalating spoils and the game never ends? We are up to spoils in the thousands and no one is knocked out yet. We all want the game to end, lol.
Any option for this scenario?

Occasionally in this type of situation some people choose to create a tie-breaker game. Invite everyone who is in contention for the win to the other game under the agreement that whomever wins the tie-breaker will be given the win in the stalemate game. Typically the losers will then suicide into each other to hand the winner the victory.
Sometimes people who really don't care will either begin to suicide or they'll just db out.
