In the example, between Step 4 & Step 5, Blue disappears.
Blue went down to 1 territory from 2 at the end of Round 1 when all players lost 1 territory, but why did he disappear at the beginning of round 2?
I would have expected Pink to bombard Blue's last territory and eliminate him...

Step 5 state that blue lost his games with his border during round 2, that's why he disappear at this point. He doesn't disappear at the beginning of round 2 but rather after the round 2 fights.

Could you make a results post with games, wins, etc? It would be easier to track the current state of this.
I gather that in the Territory Count list we border those before and after us...

Yes you border the ones over and under you. As for a results post, I'm not sure what the territory count list doesn't cover.
