Service was mediocre at best, she was definitely less attentive to our table than to others... things like getting coffee refills or other requests took longer. She was mostly hanging by the table of this couple she appeared to know. In general it was just a bad breakfast ‘experience’.
At the end. of the breakfast as we walked home my wife was convinced that the woman had giving us bad service because she was racist, and she didn’t like the idea of a good-looking white boy (my addition) being with an asian. I told my wife that I felt we got bad service because the woman was a bad server. Part of the bad service was because we were new/strangers and she was taking care of her regulars.... but part of it was because she was lazy and happy to chit-chat versus work (which would make her a bad server). Needless to say I didn’t press my case too hard, because it’s moot and not worth starting a fight with my girlfriend/wife.
So who is right?
Background, in general Massachusetts is very liberal, but as you get outside Boston to some suburban/rural areas you do get pockets of conservative areas. Now I don’t believe conservative = racist... but maybe there’s some overlap? That said, Boston proper has over 50% “people of color”, but some of these other towns are like 95%+ white... so definitely a different demographic.
The whole point here is... two people with the Exact Same experience, but because our predisposed world-view we have different opinions on what happened.
Honestly, it sounds like BS. The girlfriend/wife bit. The "asian" reference. Even if it's true, you don't come out of it well.

In what way do I “not come out of it well”? What could I / should I have done differently? How does it make me ‘look’ bad?

You don’t think there is some overlap?
I consider myself more Conservative than Liberal... at least as how these terms where used historically.
That said, I’m not afraid to admit there’s overlap... and distance myself from the racist side when I can.
It’s sad.
I was ALL ONBOARD when the Tea Party first started, and it was about reducing / simplifying taxes, and smart spending.
Then some how the movement got stolen by the crazies and the racists.
