do you get to count right away, after eliminating a player. If you have more than 5 cards?

You mean to cash, yes, you are required to cash if after eliminating a player you have 5 or more cards.

Also, correct me if I'm wrong, if you have six or more cards after eliminating a player and you get two sets from it, then you can cash in both sets to get even more armies.
