And you could have a similar chart that starts with the same ancestor (if indeed that first ape is pre-split between the two) that leads to an orangutan.

You do know that, like squares, all orangutans are apes but not all apes are orangutans, right?

False. Language itself evolved. Take english for example. Old english is unrecognizable to modern day english speakers. This is because it changed, adapted and adopted bits and pieces of other languages over a long period of time. English wasn't simply created. Nor was Language, nor were humans, nor was life.

You have really no idea what you are talking about. A dog would not evolve into a bird. That is obvious, you must be aware of this. Your example, hinges on species, evolving into different families. Mice are mammals and Lizards are reptiles. Evolutionary changes are small, and happen on the species/genus level. Only over millions of years are new Families of creatures created.

but I'll bite. A better example would be "What if dinosaurs, evolved into birds?". Well ok, I suppose you would find fossils of Dinosaurs with feathers... what's that? we did? huh, well ok. I suppose that would make sense.

Another example would be Reptiles to Mammals. This also happened. The major difference between Reptiles and Mammals is that Mammals have a live birth, while Reptiles lay eggs. So if Reptiles evolved into Mammals we would see an evolutionary step of egg laying Mammals. Well as a matter of fact this exists. The platypus comes from a line of primitive mammals that never evolved into giving live birth. In fact all Marsupials are a primitive form of the modern mammals that inhabit most of the Earth. When Australia split from the rest of the continents all mammals were more closely related to marsupials. Everywhere else they continued to evolve, while on isolated Australia they remained relatively the same.

So yes, there is evidence of this, all over the world.
