2.1 for most of the reasons OliverFA gave and a few others. Oh, and I absolutely kick arse at it as well!
Classic shapes as it is better than Classic Art (giving orders in team games is a complete bastard on that map) and it is still classic in the end. I am pretty good at kicking arse at that too!
Mongolia, Europe, Tamriel and Canada have all peaked my interest a little but not enough to stand close to 2.1 and Classic. I pretty much decided to buy premium after one round on 2.1...it is Risk as I always felt it should be.

I love the response that new worlds and feudal has had here, warms my heart 
On another note, one of my favourite maps (although I haven't palyed it in a while) is Dustbowl. I just like the idea that you can't hold a contient, defence/attack against the enemy without being punished by those -1 territories. IT is especially fun on 3 player, freestyle, speed games.

Waterloo......i find it most annoying that it's banned from a lot of tourneys though

just use the names the territs used to have and it makes it a lot easier

Iceland - because i just naturally enjoy it
New World - it was my first complex map that i was good at, and its what i rely on for me to win tourneys and clan wars
Battle of Iraq - still learning to play, but theres less luck and more skill involved and im pretty good at it. and less other people arn't
Crossword - i just seem to keep winning

All 3 AoR Maps - Nice gameplay on each
City Mogul - Very good on some settings
Europa - It is just a very nice map. I have not played many games on it, but it is just fun to play on
Feudal - Again, not played too many games on it, but a very nice map
Supermax: Prison Riot! - Fog... best map/setting combo ever made
Waterloo - Not too many games on it, but it is very unique and has a whole lot of different methods of playing it
Oasis - Very fun games, the objective is actually feasible
City Mogul - Very good on some settings
Europa - It is just a very nice map. I have not played many games on it, but it is just fun to play on

If you know how to play it, then you cant lose if you start... unless you get some serious bad luck

There's a couple of maps I really hate, a couple I am indifferent to, but overall I've enjoyed playing on most of the maps I've played.
MY favourite used to be Europe, which I kicked off with a decent 9 wins out of 10. My favourite map now is World 2.1. Size isn't everything.. does help though.
Honourbale mentions to Waterloo, Supermax: Prison Riot!(I haven't even finished my first game on it, but early opinion is that this map is awesome), and New York City.
I could name about another ten that are great maps and really fun to play.

Arms Race - Very interesting and unique gameplay. Seems well balanced though a bit small for my liking
World 2.1 - Simple and large. The best balanced map in my opinion. Easy to start from any position and fun on a variety of styles
King of the Mountains - Love the 3D graphics, and the gameplay is really fun. The helipads are worth nothing but integral to the game...the mountain tops are critical and very hard to hold. Awesome playability and not so many stalemates
Siege - I think this has the same appeal as Feudal and the AOR maps. It's like a roleplay that differs itself from CC. Not just a palette to place your men on like many maps, you really get immersed in the battle over the castle. Plus it has mibi artistry.
