Jackson was the belching drunk in Bree.

He was a defender on the wall at Helm's Deep.

In the extended version, he was the pirate that Legolas shot (with Gimli's help).

He also stood in for Sean Astin as Samwise Gamgee's arm - wielding Sting - when he first appears to save Frodo from Shelob.

Did I forget anyone?
