yes, and also Cabeza is extremely tender, moist, and juicy! Most people would never try such things as Cabeza or Lengua, but you are correct that they make the some of the best tacos and burritos!

I grew up on a farm. No problem with the weird cuts of meat. Tongue and tail meats are great for stews and stuff.

I grew up on a farm too. I've eaten brains, lungs, testicles, and stomachs. I draw the line at tongue, though. It is just so amazingly hideous to look at! I just can't eat it.

Haven't eaten any of the above but I've had plenty of tongue in my time. Not sure what it's like on your side of the water but here we get it sliced so it just looks like any other meat really. Never eat it with cheese though, that's a disgusting combination.
