Seriously, Japanese generally have lighter skin than most Italians but aren't considered white, what's up with that?

Personally, I think skin colour has a lot to do with the geographical position people live in and the climate of that region. East Asians tend to have lighter skin than Southeast Asians. Why? Because Southeast Asians live closer to the equator, which is more affected by sunlight (ex.higher intensity in terms of UV index). Exposure to stronger sunlight means darker skin. The same goes to compare Blacks and Whites(Blacks originate from Africa, which is closer to the equator than Europe). But of course, Native Americans are an exception...
It might also have something to do with cuisine, but that's just my guess

In terms of race, whenever I hear tequila I would think of a Hispanic dominated country...

I was referencing the white tourist on vacation, regardless the tropical area.

I believe in anyone from option 2, including mixed race people (with atleast 50% white in them), because they have enough white in them so IF they want they have every right to be called white, just like alot of mixed race people call themselves black.

Race is an old concept which has no real scientific or cultural validity. For any definition you try to put forward, there are just many, many exceptions... so many that the point becomes mute to all but those who do wish to use it for their own political means.

This is particularly true in the US where almost no one if of any "pure" ethnic identity. But, it is also true on a worldwide scale.

For example, there are groups of blacks with blue eyes ... etc.

just for the record, SWPL isn't really about defining white people per se, more the young worldly whites populating (and gentrifying) trendy urban areas.

That's only a theory, it has not been proven, you must experience other cultures, Chinese scientists believe that everyone descended from different types of apes, then evolved into modern day humans, you might not believe it and i'm not saying i believe in it i just think it's a interesting concept, i'm pretty undecided on the issue of humanity (though don't be fooled, i might be a Christian, but i believe in evolution too, if you want me to explain more i'd be happy to do so), but again i believe in evolution but i'm just undecided on humanities evolution and how we got to inhabit the 6 different continents.

Actually, with the advent of DNA testing even the Chinese scientists admit that all known evidence points to an African origin.

Genetic researchers say they have found fresh evidence that Chinese people are descended from Africans.

The findings also add new weight to theories that all human life began in Africa.

Academics from the University of Texas and their colleagues in China studied 28 population groups in China and concluded that most - if not all - had their genetic origins in Africa.
