I make roasts mostly. If I made meatballs I like your mom's idea. I must say best meatballs we ever had were at Moochie's Meatballs and More in Salt Lake City. We couldn't stop eating until they were gone. They were amazing!!!

The atomic meatball sub is possibly my favorite food. And I like food, a lot.

Do you have any recipes calling for diced onions with skin?

pfft, llame - mine are waayyy better. only an idiot would think that's a good meatball recipe. you should just fuckin' hang yourself, dude.

I have a stupid pinterest account for my biz (as all the young punks say you have to maximize social media presence for your small business....hasnt done shit for me but I sure get an assload of calls from people that want my hard earned money to runn my soc-med profile....idiots...ok thats a bitch for another time)...anyway, I keep a board there called Recipes I Wanna Try as a handy storage spot....go in and do one or two a week :D

I'm a bad muslim for writing this.
For the meat for your balls. The ratio for an amazing ball is 5:2:1 Beef mince:Sausage mince:Pork mince.
A ball is all about the meat, get that wrong and it doesn't matter what your recipe is, will be rubbish balls.
Common additions to the mince
- White bread, that has been soaked in milk then squeezed
- Bread crumbs
- Garlic crushed fresh, garlic salt, garlic flakes. Fresh is best, but don't be too heavy handed
- Minced carrot(this is a satanic addition by cheap skate mo fos, who want to bulk out the balls with cheap filler)
- Raw or sauteed finely diced onion
- Egg
- Basil
- Sage
- Parsley
- Walnuts
- Peanuts if you are making an asian style meatball, in which case you would reverse the ratio of beef and pork mince, and use cilantro(coriander) and chilli
- Parmesan cheese
- Mozzarella cheese
- Gravy powder(a navy cook's cheat, use instead of salt, pepper and herbs), generally partner gravy powder with more than normal garlic
- TVP

Always remember that with simple, hearty, home style cooking less is more. So make sure to only add a few items to the mince. Never more than one type of herb or nut.

Gravy is some sort of magic. My wife always makes the gravy, here, at her dad's and at her mom's house. It is simple, she takes some of the fluid from whatever roast meat was made, chicken, turkey, beef...

Put it in a pan, heat and then add flour while stirring with a whisk. Grind in fresh pepper and if needed a little salt.

She has shown her mom and I how she does it plenty of times and no one can do it right. We have no idea why but if my wife does it it turns out perfect, if anyone else tries it's a lumpy mess.

All about low heat and CONSTANT stirring and adding a little flour at a time.

We buy our chicken 40 lbs at a time thru wifes work (boneless, skinless breasts @ $1.20 / lb....smoking deal). When I process it into freezer bags, I take all the trim and make chicken stock (add spices, veggies, etc). Usually get a gallon or so, divide and freeze. Thats like $15 of free stock, better than store bought....use it for all kinds of meals.

THIS is what I use for gravy....so easy, so cheap and awesome. Just like dimey says, heat, add some milk / cream, butter, and start strirring in flour til right at a simmer. I put that shit on everything :lol:
