That's not the only factor at work. A lot of dieting is about taking time to eat. Mashed potatoes make you fat not just because they're loaded with carbs, but also because they practically dissolve in your mouth and you can shovel them in almost without chewing. Things like almonds help with weight control not just because they've got a good balance of protein and unsaturated fat, but also because they're hard and crunchy and take a long time to chew.
Celery is known as "the dieter's best friend" because it takes so long to chew you burn as many calories as you eat. Other hard crunchy things like raw vegetables and nuts are good for the same reason. What is really, really, really good is if you get almonds and other nuts in the shell and have to sit there with a nutcracker opening them. That really stretches out the time to eat them and reduces the caloric intake per unit time.

I always thought it was silly to count calories, especially when everyone's body works in its unique way. The laws of thermodynamics argue otherwise. If you input fewer calories than you use, you'll lose weight. That's the simplest way. You could eat 1500 cals of pure sugar, but if you're utilizing 2000 a day you'll drop the weight.
Now, that's not advisable, since pure sugar would also kick in major insulin production and mess with fat storage (less than optimized weight loss), but you get the idea.
Body metabolism isn't as unique as you think it is. There's a small range of variance, but nothing special.
