Probably one of the older Goudas for me, I once found a variety that had aged for about 14 months, that one was really good, approaching the flavour of an 18 month but with the texture of a "middle-old". If you ever see it somewhere, try it.

Muenster for me, as far as cheese I can get currently...

however my "all time" favorite was a cheese made by a dairy cooperative in Denmark, but that was a long time ago and it is quite possible I would find it doesn't actually taste the way I remember.

I like melted blue stilton on top of a nice sirloin steak, they compliment one and other perfectly.
