Definately not sight. Hearing is pretty valuebale. I love to taste my food. Touch is probably the most valuable of them all. I'd have to say smell.

i gave up hearing...i can already "speak" sign language, and i'm used to not hearing things (we wander with noise canceling headphones all day, we hear nothing) i would miss the music though...but what i miss most is the "GFY" or the "f*ck you" option

taste hands down. I wouldnt be able to function without any of the other ones, save for maybe smell.
Touch you wouldnt be able to move. Think of what it is like when your leg is alseep, or you have novacaine on your tongue. That part of your body is just completely useless.
Sight would blow becuase you would have to rely too heavily on your other senses.
Hearing would kill me, becuase I'm pretty sure I couldnt live without music in my life.
Smell is important to survival in general becuase it gives you clues about your environment, i.e. gas is filling the room, or theres smoke/a fire close by.
Taste is just kinda for your own self indulgence, save for like tasting poisons. Losing it would also make drinking alcohol a hell of a lot crazier since you wouldnt be able to taste shitty booze

Taste, because the texture of my food is much more important to me than the flavor. Flavors are moist, dry, grainy, thick...
