My parents were both born in New Zealand, am part maori and consider New Zealand home. Was born in Madagascar where my parents were working, grew up in no particular order Fiji, Solomon Islands, Vanuata, Australia, New Zealand. Worked in NZ, OZ, timor, thailand, PNG, and a few other countries. Am on passport number 6. My parents were medical missionaries so I grew up around mission hospitals in Africa & the Pacific. I have the travel bug, have pretty much been to everywhere in Asia except china(hong kong doesn't count in my book) and Japan, leaving the best till last. If I had my way I'ld be working in China right now, a lot of work for people with my skill set. My parents are ageing, and since I'm childless(that I know of) and have been a party animal for 20+ years. Is my turn to be the responsible child and be here for the parents. My parents who are divorced and repartnered live in Australia. Hence me living in OZ, so I'm close to them. My siblings that are blessed with children, stayed close to parents whilst I was travelling around getting wrecked and chasing me some V & D. Dad lives 2.5hrs away, when he travels(which is frequently) I go and collect mail, pay the neighbours kid to mow the lawn, turn lights on and off. You know the drill.

Vietnam is one of my favourite places that I've been. Tried spider there, deep fried tarantula, legs were nice, sadly body was soft centre, and bitter. Food is amazing, people are friendly, roads are scary, but that is normal for around the golden triangle. I try to travel to places where there aren't too many white people, in particular places that don't have too many aussies. So I steer clear of Bali, and any sex district.

Though more shipments have not been confirmed, Minister of Agriculture Martinez y Martinez said in a press release this week that 250,000 sheep will be added to his country's herd on an annual basis.

"So that by 2018 it is expected that the herd will number more than two million."

Mexico wanted to repopulate and improve the genetic make-up of the country's herds with the high quality New Zealand producers are achieving.

Whatever the good 6 fingered people of Canterbury may be doing, at least they are trying to get you Mexicans off the donkeys.

My mother is not from the mainland, hailing from Whangarei is forgivable. Visited a great aunt in Paihia last year, did the cross island drive from whangarei to paihia a few times, a lot of fun. Northlands still has some lovely single lane wooden bridges. Like travelling back through time. I believe in strength through working towards a common goal. I yearn for the day when we work out how to excise Auckland from our nation and maybe sell it to Australia. Would raise the average IQ in both Australia and New Zealand by at least 25%!!!!

Are you outspoken in R/L? Or are you diplomatic in R/L and this place is your release?

I've met a few people from CC in RL. I'm pretty much the same person everywhere I am, tone it down a bit around family, mainly because the older generation still put me in my place(shutting up while the grown ups talk! My great aunt can make my mum feel like she is 10, so imagine how small she can make me feel.). Chefs are cunts, it is a learnt behaviour that becomes addictive because it yields results. If you don't care about pc bs, and want to get results try being a chef on for size. Need to be smart, obsessive, willing to work hard, able to take abuse, verbally nimble, self confident, willing to learn. Am a qualified music teacher, my instrument is trumpet. Again that says something about my personality. Trumpet players are brash, confident, and inventive. Make a mistake on the flute, most people won't notice. Fall off a high note playing lead chair trumpet, everyone knows. Have to be able to just get on with it, rather than have your world dissolve.
With large kitchen brigades is a delicate balancing act. You can't break people completely because that gives you robots rather than leaders and effective team players. You have to have people that work within the team, so they have to suppress some of their ego and individual flair. So as an executive chef you need to find the right levers for each member of your brigade. Some people you can bribe by taking them into your confidence, others you have to bully, some need flattery, others fear being embarrassed so you can work on that fear. I like a lot of successful managers have innate leadership skills, have also honed those abilities and built on them in kitchens and in bands. I use praise sparingly in RL, I have high expectations, I treat people according to the respect they have earned. I've been blessed to find a profession that I love, and that I'm bloody good at. I'm lucky to have a lot of loyal chefs that I've trained over the years, that isn't all luck though, hard work and having people's back takes you a long way. My release used to be playing rugby. Now I fish when I get the chance, would love to get back into bow hunting.

They can do that already. However no robot can replicate the individual skill and experience of a hand made product. Food will become a high end artisan good in the near future, with being able to afford hand made a sign of wealth and status.

The difference being, you could in theory, know when something needs to be done consistently versus something needing to be customized. While having the choice of New York or Chicago is good. The choice of partially raw or burned is not as good. Knowing a batch of tomato sauce needs more of an ingredient this time and less the next, can be the difference between good and great.

Will it be one of the things that seperates us from the other apes?

That however would not be an objective choice, would be an emotional reaction. Maybe we are equally best? I don't self identify as good by any stretch of the imagination

If for some reason human meat was available, would you cook it? Ever wondered how does it taste? Did you know babies taste the best? When I worked in PNG a lot of my staff had grandparents who had dined on human flesh. Human meat is lovingly referred to as long pork. When I've been hit in the head have tasted blood on multiple occasions, don't mind the taste. Am a fan of offal, and offal products such as black pudding and a properly made haggis. Babies wouldn't be the best age for consumption. Too much fat, not enough muscle definition. I imagine a teen/early teen, right before puberty would be the best ratio of fat:muscle:bone, though have to consider expense of raising a child for consumption. Maybe a scenerio involving vat/factory grown human meat would be the most likely opportunity to bring cannibalism to the masses.

Check out my instagram, have a great little step by step collage on making roast tomato sauce/dressing. Regulating acidity is a key factor in making sauce from tomato. Try to steer clear of adding sugar, this leads to an arms race between sugar and salt. End up with some revolting red tinged liquid that tastes vaguely like pasta sauce from a can in a cheap supermarket. Use things like capsicum(bell peppers to the yanks I think), onion(caramalised), etc to balance things. Be careful using too much carrot or celery as the taste can take over a bit. Investing in a moulex to take out the skin is a worthwhile use for some hard earned.
