- melt the butter, don't burn it. Add flour
- Gradually add pre warmed stock into the hot roux(flour/butter paste), stirring constantly with a wooden spoon
- Add all the stock and bring to the boil.
- Season with a little garlic, Worcestershire sauce, and tomato sauce.
- Add salt and pepper to taste
Using this method, helps avoid lumps, and a floury taste. You can even use a stick blender once has boiled.
