We can make logical guesses based on what we know about physiology today.
... for example, a Whale is in water and needs more fat... and can support a higher fat/bone ratio. A land animal can have protrusions and weird fatty body parts that are all soft tissue... but they can't be too massive, as they will throw off the fat/bone ratio too much.

We can know. More or less. Whales have the unique situation of living in a medium that supports a significant amount of weight as long as it is less dense than seawater. Land animals don't have that ability. Flesh eaters also have the problem of needing to be able to actually catch their prey.
That leaves a whole lot of other interesting unknowns, for example, if dinosaurs had feathers. If they were as colorful as tropical birds are today.
