if a cavalry has 5 units and a cannon has 10 units wouldn't they take more than one attack to be destroyed.

He's talking about the board game risk... not just the site. With the game (to make it so there are not as many little plastic pieces,) 5 armies a represented by cavalry and 10 by cannons.

Yes, it does take more than one set of rolls. On this site though, you can press 'auto attack' which automatically rolls many sets of rolls until the attacking army gets down to 3. So you only press one button, but it is like you attacked multiple times.
