In games I suddenly notice my opponent has like 35 countries already compared to my 6-7...how do they expand so fast ?

Depends upon the game really. Those escalating games like that are more about timing than anything else.

As with most things in life, the best strategy is to go all in with no protection or consideration of the potential consequences. The faster and harder the better - it'll be over in no time at all and you can start thinking about your next conquest.
