i tried to find my question in the forums, but was unable to do so. Quick question...first time playing an assasin game, i know the object is to take out your target and the first person to do so wins the game....my question is what happens if you eliminate a player thats not your target? does the person whos going after him win the game?

Yes, that is correct, you only want to kill the person who is your target. Otherwise you will lose the game

In an assassin game each player is assigned a secret target, designated in-game with crosshairs Assassin Target next to the username. You win the game if your target is killed - whether it be by you or another player! When a player is auto-kicked in an assassin game, the game continues and whomever had the deadbeat now has to kill the deadbeat's target.

I have another question about assassain - On maps with a hold and win objective, does that still allow you to win?
