I cant find some general info on all the maps. I thought it would be in the foundry. I am interested to know

what is the most common number of territories on a map?

roughly how many rounds would it take to win on average?

The most common number is probably 42. That's the number that is on Classic and many other standard style maps.

How many rounds? I guess for the Classic map if you just play 1v1, I would say average would be about 7-9 rounds, but that is completely dependent on the settings for the game.

any ideas where I might find a list of maps by territory number. I came across one in a tourney which i think was a list of maps with 42 territories but can't find it now.

I have no idea. I sure don't have one. I might check with the people in the Map Foundry or the strategy guide Forum.
